I am Chef Loren Holly. I was educated in culinary training and apprenticed under Chef Franz Kubak of the Hilton Hotel in SLC, Utah, Chef Simi Niumatalolo of the PCC in Laie, Hawaii, and Chef Jose Serrano of The Mayan Restaurant in Sandy, Utah.
During my tenure training under some of the best chefs in the culinary field, I played a strong role in opening several restaurants such as The Mayan where I performed a crucial role as a sous chef helping to bring the first year budget from millions of dollars loss down to a $900,000 loss.
At Tsukiji's Restaurant in Honolulu, Hawaii, as an executive chef, I helped open the restaurant and created part of the menu that is still enjoyed by many.
In 2001, at the age of 28, I became the executive chef for Brigham Young University in Hawaii where I oversaw several food service departments, such as the catering department, student dining hall, snack bar outlet, and takeout services, where I managed over 30 employees, and I also created a new system to manage labor and food costs, saving the university much time and money and bringing the food services department from a rolling negative balance to a positive surplus by the time I left in 2007.
In all my years being in the business, I, Chef Loren Holly, had served high-profile celebrities like Bill Cosby, Della Reese, Roma Downy, John Dye, Gladys Knight and The Jets.
On top of that, I served world leaders like the King of Tonga, King Tupou VI, Indonesia President, Yudhoyono, when they Visited BYU, Hawaii while I was the executive chef; former governor, Linda Lingle, who was the first lady and republican to hold office at that level in Hawaii; and also Governor Aborcrombie, who is the current governor of Hawaii.
So, my experience in serving the clientele of all status is not new to me. With my strong creative talents coupled with my vast experience and knowledge in the food service, I can bring the abilities needed to ensure the success, attention to detail and the needs of our clientele.
