Catering is charged per person. Most other services are charged by the hour.

What is your typical process for working with a new customer?

It depends on the service provided. But since every customer has their own expectations , the process begins with an interview to gain a better understanding of exactly that. The information becomes part of a plan that is tailor-suited to the client's own particular needs and comfort level.

What education and/or training do you have that relates to your work?

Over 20 years working in professional kitchens, beginning as a dishwasher and moving through the ranks to executive chef.

How did you get started doing this type of work?

Like many people in my profession, I began as a teenaged dishwasher.

What types of customers have you worked with?

All types. From corporate parties to family holiday meals and from sandwich trays to gourmet dinners for two.

Describe a recent project you are fond of. How long did it take?

I spent six months working as a personal chef for a client struggling to lose weight. I prepared her three meals and two snacks per day, seven days a week. She lost 65 pounds and was a very different person thereafter. While I've always enjoyed cooking for others and there are many things I'm proud of, it's pretty rare that you actually get to change someone's life.

What advice would you give a customer looking to hire a provider in your area of work?

Most chefs are eager to please and will go out of the way to keep their clients happy. They should be experienced, attentive to your needs and instill a sense of confidence. Pricing can vary dramatically. Shop around.
