What is your typical process for working with a new customer?
1. Initial Contact
When a customer reaches out, we respond promptly to gather key details about their event: date, location, guest count, type of event, and any specific requests. This helps us understand their vision and needs from the start.
2. Menu & Service Customization
Based on the event type (e.g., wedding, private party, corporate event), we recommend menu options from our offerings or customize a package that fits their preferences. For special requests or dietary considerations, we work closely with the customer to accommodate them.
3. Proposal & Booking
We provide a detailed proposal that outlines the menu, pricing, and logistics, including the truck fee and setup details. To secure the date, we require a deposit (typically $500–$1,500) and have the customer sign a contract confirming the details.
4. Pre-Event Coordination
As the event approaches, we confirm final details like guest count, timeline, and any updates. We also handle logistics such as permits, parking, and setup requirements, ensuring everything runs smoothly.
5. Event Day Execution
On the day of the event, we arrive early to set up and prepare. Our team delivers professional, efficient service while creating a fun, vibrant atmosphere with our signature Cuban flavors and high-quality dishes.
6. Post-Event Follow-Up
After the event, we follow up with the customer to ensure satisfaction and gather feedback. We also encourage reviews and referrals, helping us build lasting relationships and improve future services.
This process allows us to deliver a seamless, personalized experience for every customer, ensuring their event is unforgettable.

Describe a recent project you are fond of. How long did it take?
One recent project we’re especially proud of was catering a wedding weekend event that included a rehearsal dinner, reception, and after-party. It was a multi-day celebration with around 150 guests total, and we worked closely with the couple to craft a customized menu that reflected their vision.
Event Details:
• Rehearsal Dinner:
We served light finger foods, trays of arroz con pollo, and empanadas for 50 guests. The focus was on creating a casual, welcoming atmosphere.
• Reception:
For the family-style meal, we prepared a variety of Cuban dishes for 100 guests, including our signature Cuban sandwiches, empanadas, and fresh sides. It was designed to encourage sharing and connection.
• After-Party:
For 50 guests, we provided empanadas, churros, and mini desserts, keeping the vibe fun and easygoing as guests danced and celebrated into the night.
Timeline:
Planning and coordination took about three weeks, as we worked with the couple to finalize the menu, guest count, and event logistics. On the day of the event, our team arrived early to set up and execute seamlessly across all three parts of the celebration.
Why We Loved It:
This project highlighted what we do best: delivering a blend of high-quality food and exceptional service while accommodating the unique needs of each part of the celebration. Seeing the guests enjoy the food and atmosphere we helped create made it a truly rewarding experience.
What advice would you give a customer looking to hire a provider in your area of work?
Here’s the advice we’d offer to a customer looking to hire a food truck or catering provider:
1. Know Your Vision
Think about the vibe and experience you want for your event. Are you looking for casual, upscale, or something in between? Knowing this will help you select a provider whose style matches your needs.
2. Check the Menu
Ask for a sample menu to ensure the offerings fit your event and guest preferences. A great provider should offer flexibility to accommodate dietary needs and special requests.
3. Ask About Experience
Choose a provider with experience catering events similar to yours. Whether it’s a wedding, corporate event, or private party, their expertise will ensure a smooth and memorable experience.
4. Understand Pricing
Look beyond the price per person—ask about fees for travel, permits, setup, and any extras. A clear breakdown will help you avoid surprises.
5. Read Reviews
Check online reviews and testimonials to learn about past customers’ experiences. This will give you confidence in the provider’s food quality and service.
6. Book Early
Food trucks often book up quickly, especially during peak seasons. Secure your date as early as possible to avoid missing out.
7. Communication is Key
Work with a provider who listens to your needs, responds promptly, and communicates clearly. This ensures a stress-free planning process.
By following these steps, you’ll be able to select a provider who will elevate your event with exceptional food and service!
