I work within any budget and will work with the client to stay in budget, whether it is a suggestion about food, guests or décor. We will work together.

What is your typical process for working with a new customer?

Schedule a phone conference to discuss details of event. Schedule a tasting to fine tune the clients palate and discuss the contract. I maintain contact with my client until the big day to assure details of the event have not changed.

What education and/or training do you have that relates to your work?

I am always studying material on food safety, multi-cultural cuisine and customer service.

How did you get started doing this type of work?

I've always loved to entertain. Each year my husband and I would have a Fourth of July party that started out with a few couples enjoying a sunrise horseback ride followed by a rustic backyard BBQ. After a few years, our simple affair turned into a huge block party with bounce houses, dunk tanks, mechanical bull rides and live entertainment. I was in heaven. The word spread and before I knew it I was cooking for friends and friends of friends while helping them plan their parties. This is when I decided this was the industry for me. I continued my education in the Culinary industry and began pursuing my dream. I have a passion for good, quality food that is cooked from the heart. My mom taught me that "if you feed them well, your party will be a success." I remember that with every meal I prepare and event I plan.

Describe a recent project you are fond of. How long did it take?

One HOT Dish recently catered the Roy Rogers and Dale Evans Legacy Trail BBQ.. We served slow roasted BBQ tri tip with my signature mop sauce, cowboy baked beans, grilled corn on the cob with chipotle butter, salad and garlic bread. The elements were treacherous and although I checked the weather repeatedly, it changed within 6 hours of show time. The locals described this condition as the "Devil Wind" When my team arrived there was no safe place to BBQ with an open flame. We were literally in the middle of the desert in historic Apple Valley. I had to pack up and travel 30 minutes to my restaurant and BBQ food for 350 people. Even during this trying time, we managed to pull it off and serve hot and delicious food on time. A proud moment.

What advice would you give a customer looking to hire a provider in your area of work?

Talk to your caterer, get to know them, taste their food and ask for referrals.

What questions should customers think through before talking to professionals about their project?
