What should the customer know about your pricing (e.g., discounts, fees)?

I base my prices on per person and from there can make adjustments to give final price based on the menu provided by client.

What is your typical process for working with a new customer?

My first goal is learning 3 things right away: What the occasion is, what type of cuisine is in mind, and how many guests are expected. After that information is provided, I can do my best to stay within budget and offer suggestions to assist the most I can.

What education and/or training do you have that relates to your work?

I have over 20 years of experience in the restaurant industry. I learned many aspects of the business including managing banquet halls and catering and I have learned what it takes to make an event successful, from small corporate lunches to Indian weddings with over 1000 guests.

How did you get started doing this type of work?

I started out as a busboy and found my way up to management. I have been working hard in the food industry for over 20 years- I love to be a part of the fond memories of each event. I took my knowledge and started my catering business. I love the fact that each event allows me to be more creative and learn something new. The food at an event can make all the difference to the client and their guests.

What types of customers have you worked with?

I have worked with clients who want to hire my chefs for a private event and I've put on prominent corporate events. I have done simple birthday parties to extravagant weddings. I have a diverse team with an equally diverse menu which allows me to work with a broad scope of customers.

Describe a recent project you are fond of. How long did it take?

I was hired for a project for "Marie Claire/Chanel" at Bloomingdale in downtown Chicago. It took 2 months of communicating over the phone and through emails (I could not meet the client in person as they were based in New York). They were rolling out a new clothing line so I gathered as much information as I could about their vision for the event. I performed the site visit myself and also booked everything for them, including the additional staff and rentals. My hard work paid off, it turned out great and my client could not have been happier. I believe the fact that I treat each project with the highest priority is what separates me from the other guys.

What advice would you give a customer looking to hire a provider in your area of work?

I would say make sure that you and the caterer are on the same page as far as what food, food quantity and service you are getting. Get a standard contract that will outline the what the caterer will provide for you on the day of your event. If its a big event, invite the caterer to do a site visit with you so they have your vision of how you would like things to be that day. Discuss things such as setup area and timing of food. I always do a site visit and ask questions so I see the vision of my client. I want to make sure I have all the details so that on the day, the client can focus on what's important, creating memories.

What questions should customers think through before talking to professionals about their project?

They should have an idea of the budget. They should decide if they need more than just food. Is staff needed? Will they need rentals (chairs, tables, linen)? When ordering drop off, do they have a way to keep the food warm or will they need to rent warmers? Will disposable supplies be needed for your event? Will you need staff to help set up your tables?
