What should the customer know about your pricing (e.g., discounts, fees)?

We charge a 5 hour minimum for wait and bar staff. Our rates are not the same in all areas of the Island. Traffic and distance dictates the hourly rates.

What education and/or training do you have that relates to your work?

Holly is a three time graduate of St Josephs College earning two Masters Degrees. Holly also has been in the off premises catering industry for over 25 years. Holly also holds a Suffolk County Food Handler Managers certification. Holly is also current with F.A.C.T.S Flight Safety Training and is available to travel in with clients on Charter Flights and is available to work for Charter Companies. Holly is certified in CPR/AED

How did you get started doing this type of work?

Holly started in the food industry in 1978 in a small seafood restaurant called the Albatross as a food prep and bus girl. Holly moved on to a large restaurant called Pat & JIms in 1981 until that restaurant changed hands in 1984. Holly remains close with the past owners of these businesses till today. In 1996 Holly went to work for the famed Seafood Shop in Wainscot, NY and work under Peter Ambrose for many years as a wait/cook on private events across the Hampton's before launching her own company.

What types of customers have you worked with?

I serve the highest end clientele in the Hampton's, Mill Neck, and everyone else in-between.

Describe a recent project you are fond of. How long did it take?

We really enjoy catering small intimate events in private homes. Pool lunches , family BBq's, Clambakes, and Brunches.

What advice would you give a customer looking to hire a provider in your area of work?

Always look for a reputable company that has been in business for a considerable amount of time. Ask for client references. Ask about the staff, are they adults, do you do background checks. Is your company registered with the IRS. A lot of companies on line are cash businesses with no insurance or no a registered business in the counties clerk or filing taxes. You have no recourse if something goes wrong! Reviews do not tell the whole story. Call and ask questions, speak to the office. Know who you are working with.

What questions should customers think through before talking to professionals about their project?

Have a Budget in mind, how much am able to spend on the event. Have an accurate head count of guests attending your event. Tell your company if you need a cook/griller or bartender. The wait staff cannot do 2 jobs at once.
